It was nice to go away on vacation last week, but it is also nice to be home. Of course I am still trying to catch up.
For this week’s Barks and Bytes I thought I would share a few odds and ends from our vacation.
Pheasant Spread
I tried a new recipe for a pheasant spread last week. It was extremely easy and really tasty.
Ingredients:
- 3 cups cooked, chopped, pheasant breast (To cook, boil pheasant breast in salt-seasoned water.)
- 3/4 cup mayonnaise
- 1/4 cup green onion, chopped
- 1 tablespoon Dijon mustard
- 1 teaspoon dill weed, dried
- 1/4 teaspoon garlic salt
- 1/4 teaspoon Lawry’s Seasoned Salt
- 1 jalapeno, chopped
Directions:

Place all in food processor.

Pulse a few times until well mixed.

Chill or grab the crackers right now.
It is a very forgiving recipe because the only ingredient that I actually measured out was the mayonnaise. You can serve it warm right after you make it, or chill it in the refrigerator. It is yummy either way.
I cannot wait to make more of this spread. If you happen to have some pheasant breasts in your freezer, you might want to give it a try.
Duck Rumaki
Usually on Thanksgiving I make some snacks for lunch. One of our traditional snacks is Duck Rumaki. I marinade the duck in a bottled ginger or soy marinade overnight. The next day I chop the breasts into bite sized pieces, add a whole water chestnut, wrap in bacon and broil. Just at the end I may glaze with some fruit jelly.
Oh Christmas Tree
I always put up a small tree with a woodland theme at the cabin.
No sooner did I get the tree up when here come Nestle to claim her spot under the tree.
Roo-ing Fun
Freighter is a vocal dog. He always has a lot to say. He even sasses back sometimes.
All of our Chessies roo-ed when they were young, but once they grew up, they stopped.
At 3 years old, Freighter is still roo-ing. I think it is here to stay. 🙂

I think Freighter’s roo-op is cute and he obviously has decided to be unique and just keep it going. Mica is the only one of ours that started howling. She started as a puppy kind of cracking in places but she kept it up an perfected the sound:)

Freighter can come roo roo with us, we do it all the time. This year Katie is in love with out tree. She sleeps under it all the time. Well,, she is too big, so she sleeps with her head under it. It is so cute. Vacation is fun but we love coming home too.

Ducky is a very vocal dog, too; but everything I’ve read about Corgis indicates that it’s normal.
Those recipes look yummy, and I love your tree! I couldn’t play the video right now, because we just got Luke settled down resting and I don’t want to rouse him again! LOL
I have so many pheasants in the freezer so will be trying out that spread, and maybe subsitute a pheasant for a duck breast in the bacon wraps. Beautiful tree! It’s cool Freighter still roo’s gman does too and I love it
